Kiddo Cook in May - Bowl of Rice

This month, the kiddos enjoy every bowl of rice. Three simple dishes yet they are the kid's all-time favourite :)









Here's the recipe if you would like to try it with your kids :)

CHICKEN RICE
[That’s All U Need for Rice]

1cup rice
1cup chicken stock
10g chinese parsley
2g turmeric
12cm ginger
3clove garlic
1pc yellow onion

[That’s All U Need for Steam Chicken]
1pc chicken whole leg
5g five spice
1tsp light soya sauce
3dash sesame oil
1pc onion
3clove garlic
1tbsp cooking oil
10g spring onion

NASI LEMAK
[That’s All U Need for Rice]

1bowl rice
1leaf pandan
1bowl santan
1bowl water
1pinch salt
5cm ginger
1pc onion
2dash cooking oil

[That’s All U Need for Sambal Ikan Bilis]
30g chili giling
1pinch salt
1pinch sugar
½cup cooking oil
1/4cup air asam
1pc red onion
3clove garlic

CHEESE-BAKED RICE
[That’s All U Need]

1cup rissotto
2cup rice
½cup cheese
½cup mixed seafood
10g chinese parsley
10g spring onion
2stk crab stick
1pc aluminium foil

Kiddo Cook in April - BBQ Mood (cont'd)

This month, the kiddos continued their BBQ Mood. Have the kids in the kitchen (for the preparation of food), then enjoy the outdoors!!
















Here's the recipe if you would like to try it with your kids :)

PRAWN SKEWER
[That’s All U Need]

3pc big prawn
2pinch turmeric
1pinch salt
1pinch pepper
½tbsp cooking oil
1/4 yellow onion (cube)
½ cucumber (cube)
3stk skewer stick

[Step-by-Step]
1) Marinate the prawn with all ingredients.
2) Place the prawn from tail to head into the skewer stick.
3) Bake / grill the prawn at 90˚C for 10mins.

MANGO SMOOTHIE
[That’s All U Need]

½ fresh mango
1cup mango juice
½ plain yoghurt
2 1/4cup sugar
3bowl ice cube

[Step-by-Step]
Blend everything in blender until smooth.

GRILL FISH
[That’s All U Need (Grill Fish)]
2 fish steak
1pinch salt
1pinch pepper
1/4cup cooking oil

[Step-by-Step (Grill Fish)]
1) Wash the fish with skin.
2) Marinate all ingredients and bake at 90˚C for 5mins each side.
3) Serve with Collis Dipping.

[That’s All U Need (Collis Dipping)]
½ yellow onion (chopped)
½ sweet basil (chopped)
1dash balsamic
1tsp olive oil / cooking oil
1pinch salt
1tsp tomato ketchup
1tsp honey
½ fresh tomato (cube)
* Mix all ingredients and chill for serve.

STUFFED SQUID
[That’s All U Need]
1 squid
1/4cup teriyaki sauce
½cup cooked rice
1/4 yellow onion (chop)
3clove garlic (chop)
½tbsp dark soya sauce
20g melted butter
1pinch salt
10g chinese parsley (chop)
1 toothpick

[Step-by-Step]
1) Mix the cooked rice with butter, salt, dark soya sauce, garlic, onion, chinese parsley.
2) Stuff into squid, cover with squid head and hold with toothpick.
3) Glaze with teriyaki sauce and bake for 10mins.
4) Serve with Thai chili sauce.

KATSU DON
[That’s All U Need (Katsu Don)]

1 bowl sushi rice
10g spring onion
1 egg
1cup udon sauce
1/4 yellow onion (sliced)
1 Katsu Chicken*
2pc Japanese ginger

[Step-by-Step (Katsu Don)]
1) Cook the rice and let it cool.
2) Boil the udon sauce. While boiling, insert onion & egg. When the egg is half cooked, insert Katsu Chicken for 4mins.
3) Pour udon sauce and chicken on top of the rice.
4) Place spring onion on top before serve.

[That’s All U Need (Katsu Chicken)]
1pc boneless chicken
2sp salt
2litre water
1 egg
30g breadcrumbs
30g flour

[Step-by-Step (Katsu Chicken)]
1) Wash the chicken and soak in water & salt for 30mins.
2) Dry the chicken and roll with flour, egg then coat with breadcrumbs.
3) Pre-heat deep fryer at 90˚C, cook the chicken for 25mins.

Kiddo Cook in March - BBQ Mood

This month, the kiddos are in BBQ Mood. Get them involved for the preparation of "picnical" food is fun. When the food is sizzling hot, that's the best time to enjoy the food :)













Here's the recipe if you would like to try it with your kids :)

YAKITORI
[That’s All U Need]
½ chicken breast
1tbsp onion (chopped)
1pinch salt
1pinch pepper
1cup Teriyaki Sauce
3-4 satay stick

[Step-by-Step]
1) Marinate all ingredients about 25-30mins.
2) Cut the chicken in cube size (5cm x 3cm).
3) Put the chicken on satay stick.
4) Bake at 90˚C for 15mins.
5) Brush the cooked Yakitori with Teriyaki sauce before serve.

GREEN SALAD
[That’s All U Need (Salad)]
7pc iceberg lettuce
1/4 carrot (sliced)
8 cherry tomato
1/4 capsicum (sliced)
1/4 cucumber (sliced)

[That’s All U Need (Dressing)]
2tbsp mayonnaise
½tbsp olive oil
5drop sesame oil
1pinch pepper
1pinch salt
1pinch sugar

[Step-by-Step]
1) Wash all vegetable with ice water. Drain it dry and slice.
2) Mix all dressing ingredients in a bowl until fine.
3) Place the vegetable in a bowl and pour in the dressing before serve.

LEMONGRASS SATAY
[That’s All U Need]
150g minced chicken
½ yellow onion (chopped)
3stk lemongrass
1pinch chicken stock
1pinch salt
1pinch cumin powder
1pinch turmeric powder
1pinch fennel
1pinch coriander powder
1pinch aniseed
1pinch cinnamon powder
2tbsp corn flour

[Step-by-Step]
1) Mix all ingredients together with hand (except lemongrass).
2) Divide the mixture to 3 portion and stick it to lemongrass.
3) Place the satay in freezer for 10mins.
4) Bake the satay at 170˚C for 30mins or until golden brown.

BRUSCHETTA
[That’s All U Need (Garlic Bread)]
6slice french loaf
100g melted butter
3clove garlic (chopped)
15g spring onion

[Step-by-Step (Garlic Bread)]
1) Melted butter, sauté with the garlic and spring onion.
2) Brush garlic butter on french loaf. Bake at 170˚C for 5mins.

[That’s All U Need (Salsa)]
½ tomato
1/4 yellow onion (cube)
3stk coriander leaf
1pinch salt
1tsp lemon juice
½tsp honey

[Step-by-Step (Salsa)]
1) Mix all ingredients.
2) Place on crispy hot bread before serve.

TERIYAKI CHICKEN
[That’s All U Need]
1pc boneless chicken breast
1pinch salt
1pinch pepper
1/4 yellow onion (cube)
1/4 fresh tomato (cube)
1tsp honey
1dash lea & perrins
1dash sesame oil
½tbsp tomato ketchup
1tbsp teriyaki sauce

[Step-by-Step]
1) Wash the chicken and cut into two.
2) Marinate with pepper, salt, honey, lee & perrins, sesame oil, tomato ketchup & ½tbsp teriyaki sauce for 25mins.
3) Place cube tomato and cube yellow onion on top of the chicken. Bake at 90˚C for 20mins.

BAKED POTATO
[That’s All U Need]
2 potato
1/4 bell pepper (chopped)
½tbsp mayonnaise
1/4tbsp chicken stock
½tsp cheese
1pinch salt

[Step-by-Step]
1) Wash and boil potato for 45mins.
2) Cut the potato to half. Dig the center part of the potato, mix with all ingredients and place it back into the potato.
3) Place the cheese on the potato, bake for 10mins.

Cupcakes Decoration

Having a gorgeous cupcake as a dessert is definitely the crowning culinary delight of any party.

Just as simple as that, Kiddo showing off their decorating skills~~































Peanut Butter Cookies

Chef Teddy loves peanut butter, do u?

Ingredients
280g Plain Flour
50g Corn Flour
1tsp Baking Powder
150g Butter / Margarine
100g Caster Sugar
2tbsp Chunky Peanut Butter
1tsp Vanilla Essence
1 Egg

Method
1. Plain Flour, Corn Flour & Baking Powder - Sifted together as "A".
2. Cream Butter / Margarine with Caster Sugar; then add Peanut Butter & Vanilla Essence; then add Egg; lastly slowly add in "A". Mix well until foam.
3. Make a dough ball and flatten it on a tray.
4. Drop Peanut Butter on the top. Bake at 180'C for 15-20mins.
5. Leave it cool & ready to eat.

Pineapple Tart

Everyone love Pineapple Tart & it is a must for CNY.

Ingredients for Pineapple Jam
250g Grated Pineapple
150g Caster Sguar
1tbsp Lemon Juice
1 Pandan Leaf (Optional)

Method for Pineapple Jam
1. Bring all ingredients in pot & simmer for 30mins until thick.
2. Sieve in Corn Flour, mix and let cool & ready to use.

Ingredients for Tart
150g Flour
1/4tsp Salt
2tbsp Corn Flour
100g Butter / Margarine
1 1/2 tbsp Icing Sugar
1/4tsp Vanilla Essence
1 Egg Yolk

Method for Tart
1. Seived all the dry Ingredients (at least 3 times).
2. Mix all the Ingredients until become dough.
3. Do the Pineapple Tart: Make a round dough (50g), flatten it, put the Pineapple Jam (10g) at the center, wrap it with dough.
4. Before bake, brush the tart with egg wash (i.e. mix the egg with some water).
5. Bake at 180'C for 10-15mins.
6. Let it cool & ready to eat.

Choc Chips Cookies

Choc Chips Cookies, definitely the 1st pick of Kids Favourite CNY cookies!

Ingredients (for 2 dozen)
115g Butter (at room temperature)
50g Caster Sugar
110g Dark Brown Sugar
1 Egg
1/2tsp Vanilla Essence
170g Plain Flour
1/2tsp Baking Powder
1pinch Salt
135g Choc Chips

Method
1. With an electric mixer, mix Butter, Caster Sugar, Dark Brown Sugar together until light & fluffy.
2. In another bowl, mix the Egg and Vanilla Essence, sift over the Flour, Baking Powder and Salt. Finally, add-in the Choc Chips and mix well to combine.
3. Place heaped teaspoonful of dough at least 5cm apart, as the mixture will spread out.
4. Bake until lightly coloured (take around 10-15mins)
5. Transfer to a rack and let it cool.

Creepy Cupcake

Have a happy & creepy halloween~

Make your cupcakes (recipe is here) and decorate it with Fondant.

Fondant Ingredients
100g Icing Sugar
5g Gelatin (dilute with 2-3drop of Water)

1. Drop the diluted Gelatin on Icing Sugar. Keep mixing until it forms Fondant Dough.
2. Add the colouring by using toothpick.
3. Enjoy Creepying~~

Sushi

Sushi was inexpensive and easy, more importantly the kids had fun.



Sushi Ingredients
1cup Sushi Rice
2cup Water
1/2stk Crab Stick
1leaf Lettuce
2slice Cucumber
1/2 Egg (Fried)
1pc Nori (Japanese Seaweed)







Biscuiti

These delightful biscuits are golden brown and crusty. Indeed, it's a great snack for tea-time :)



Ingredients
[A]
66g Butter
13g Yolk
52g Egg
3g Vanilla
1g Salt
79g Sugar

[B]
131g APF
16g Milk
3g Baking Powder

[C]
40g Almond
52g Chocolate Chip

Steps
1) Beat A until fine, then add B for quick mix. Last add C for final mixing.
2) Place the mixture into a baking box, bake it at 180'c for 45min.
3) Remove the biscuiti from the oven, slice it to the size and shape you preferred.
4) Bake the sliced biscuiti again at 180'C for 5min each side.
5) Dip'it in the melted chocolate to enjoy the biscuiti to the max!
